Here’s a quick, easy salad loaded with good for you nutrition like lean protein, fiber, omega 3s and antioxidants. It’s perfect for the summer! You can also serve it on a lettuce or Swiss chard leaf for a pretty presentation worthy of a restaurant.
Makes 4-5 servings
5 x 5 ounce cans of albacore tuna packed in water, drained
3 cups artichoke hearts packed in water, drained and chopped
1 cup chopped yellow pepper
1 cup Roma tomatoes, seeded and chopped
1 avocado peeled and pitted, chopped
1 Tablespoon fresh lemon juice
1 teaspoon freshly ground black pepper
1/3 bunch fresh cilantro, chopped
Combine in a bowl and mix well.
