What do I frequently hear from people? “I don’t have enough time to cook.” “I am too tired to cook.” “Fast food is faster than cooking.” “Eating healthy is expensive.”
Well, the recipe below is a solution to all of those comments. This costs about $6, cooks in less than 10 minutes and has less than 5 ingredients. You can’t beat that! This recipe meets Meatless Monday criteria and my meat eating friends love it. If you want, you can add brown rice, or better yet, barley to complete the meal.
As for the comment “fast food is faster than cooking”, have you checked out the drive thru lines or the lines at the counter at meals times? I assembled this dish in less than 10 minutes.
2×8 ounce packages organic tempeh (e.g. Trader Joe’s)
1x1pound bag of frozen mixed vegetable stir fry blend (take it out of the freezer and start thawing while sauteing the tempeh)
1 Tablespoon olive oil
1/3 cup Trader Joe’s Spicy Peanut Vinaigrette (or similar)
Heat skillet over medium high heat. Add olive oil. Thinly slice tempeh, add to skillet and saute until lightly browned. Add bag of mixed vegetables. Saute until vegetables are thawed. Stir in dressing. Heat through.
